2012 Sticks Merlot 

Tasting Notes

Colour: Vibrant maroon.

Aroma: Red berries, fleshy cherries, cocoa, green olives, bay leaf.

Palate: Plum, black cherry, fruitcake, round.

WINEMAKING

A moderate season overall. Great temperatures and plenty of sun without excesses, a high water table like we hadn’t seen in years, perhaps the "perfect" season.

Harvested in early April, the fruit was immediately destemmed and crushed into static fermenter. The alcoholic fermentation regime included aeration and pumping over for the flavour and tannin extraction from the fruit. The aeration assists with stabilizing colour and softening tannin, while also maintaining healthy yeast in the ferment. After an 8 day fermentation to sugar dryness, the wine was pressed out to tank. The malolactic fermentation was completed in August.

French oak maturation followed. The wine was filtered and then bottled on the estate.
