Tasting Notes

Colour: White gold with a green tinge

Aroma: White florals, poaching pears, lime, nougat.

Palate: Nashi pear, preserved lemon, spice, generosity.

WINEMAKING

A moderate season overall. Warm temperatures and plenty of sun without excessive heat. Cool morning harvest, the grapes were loaded directly into the top of the press and de-juiced immediately.

Overnight settling, followed by a very ‘hard’ racking and warming to ferment. Wild fermentation on its grape solids for 27 days and stirred on lees post fermentation. Matured on lees for 4 months prior to bottling preparation.

Bottled in August 2014.
