WINEMAKING

A moderate to warm spring in 2012, combined with rainfall of 35-60mm in the local area, meant vine growth progressed well. Good canopies ensued, along with balanced crops. A spike in the temperature in February, along with heavy rainfall in late Feb (60mm over 3 days) put some pressure on in relation to disease control.

Harvested from vineyards in the areas of Dixon’s Creek, Yarra Glen, Coldstream and Gladysdale, each vineyard is handcrafted individually. Open pots and static fermenters provide difference in control of fermentation management technique, temperature and flavour and tanin extraction. Yeast selection also allows winemakers to enhance mouthfeel, structure and fruit, depending on what each vineyard is bringing to the wine.

Matured in French oak hogshead and stainless steel vessels for approx. 9-12 months. The individual parcels are then assessed and blended prior to a coarse filtration and estate bottling.
