Tasting Notes

Colour: Bright and crimson with purple hue.
Aroma: Mulberry fruit, raspberry, dill spice.
Palate: Red currant, mulberry, dark cherry, briar bush, seductive.

WINEMAKING

A cooler growing season with majority of days being cloudy and overcast, providing very little sunshine to promote the usual levels of photosynthesis in the grapevines.

Harvested from the middle of the Yarra Valley in Coldstream on 12th April,we elected to have a ‘play’ with this fruit. The open fermenter filling process was to create a sandwich. First third of the fermenter had destemmed fruit tipped into it, the middle third had whole bunches poured into it, and the final third was destemmed and crushed.

The fermentation began and was plunged very minimally to ensure no damage to the whole bunches. After 6 days on skins and being almost sugar dry, the fermenter was pressed and then racked to oak. This pressing action released sugar from the whole berries and bunches allowing a prolonged fermentation to be completed in French oak barrels. The wine completed alcoholic and malolactic fermentation in the barrels and was matured on its lees for a full 12 months. Post maturation, the wine was racked and given a light filtration prior to bottling.
